Roasted Plum Tomatoes with Blue Cheese

The other day I took some plum tomatoes, halved them, and spread them on a baking sheet with foil. I drizzled olive oil on top along with salt and pepper, then roasted them for about 5 minutes on 400 degrees.

I then placed about 1 TBSP of blue cheese crumbles on each one and cooked them another few minutes until the cheese was melted.

They make a tasty and simple side dish that pairs well with pasta or salad!
